Home Care Recipes: Vegetarian Tacos

Home Care in Arvada CO

Home Care in Arvada COThe concept of “Meatless Mondays” has become a nationwide phenomenon as more people than ever are starting to learn about the benefits of eating a more plant-based diet and reduce the animal products that they eat. Whether you are just following this trend and cutting down on meat in your parents’ diet one day a week or are committed to making this change across their entire diet, making sure that you can still enjoy the meals and flavors that you all love ensure that you can get the health benefits of a vegetarian eating style without getting frustrated and losing interest.

This recipe is a delectable meatless version of the family-favorite dinner of tacos that does not rely on meat replacements. Instead, garbanzo beans, also known as chickpeas, offer meaty, satisfying texture, earthy flavor, and a good dose of both protein and dietary fiber, while plenty of spices and chili peppers create the warm, familiar flavors.

Extra tip: If your family does not enjoy hard tacos, you want to make these tacos easier to eat for seniors with chewing or swallowing concerns, or you simply want to add an extra layer of homemade goodness to this recipe, you can replace the hard shells with homemade tortillas. Encourage your parents to get in the kitchen with their senior health care services provider to make a big batch of homemade tortillas and then fill them just as in the recipe, but heat for only 3 minutes.
