What You Will Need

  • 8 taco shells
  • 1/2 of a teaspoon of ground coriander
  • 1/2 of a teaspoon of chili powder
  • 1/2 of a teaspoon of cumin
  • 3 to 5 tablespoons of chunky salsa
  • 1 can of garbanzo beans
  • 1 garlic clove
  • 1 jalapeno pepper
  • 1 red pepper
  • 1 stalk of celery
  • 1 small yellow onion
  • 1 tablespoon of olive oil
  • A large fry pan
  • A sharp knife
  • A cutting board
  • A baking pan

What to Do

  • Chop the yellow onion and put it aside
  • Chop the stalk of celery and put it aside
  • Chop the red pepper and put it aside
  • De-seed and mince the jalapeno pepper carefully and put it aside
  • Mince the garlic clove and put it aside
  • Drain the can of garbanzo beans and put it aside
  • Heat oil on medium heat
  • Add the onions to the fry pan and cook, stirring occasionally, for 2 minutes
  • Add the garlic and cook until fragrant
  • Add the celery, pepper and jalapeno
  • Cook until the garlic and onion are softened
  • Add the garbanzo beans to the pan
  • Add the spices to the pan and cook for 2 minutes
  • Add a couple of teaspoons of salsa to the pan
  • Cook until heated through
  • Preheat the oven to 350 degrees F
  • Place the taco shells in the baking pan
  • Fill the tacos evenly with the filling
  • Bake the tacos for about 5 minutes, or until the shells become harder and begin to smell fragrant
  • Remove from the oven and allow to cool for 1 minute
  • Serve hot

Extra tip: If your family does not enjoy hard tacos, you want to make these tacos easier to eat for seniors with chewing or swallowing concerns, or you simply want to add an extra layer of homemade goodness to this recipe, you can replace the hard shells with homemade tortillas.
